IOT ECOSYSTEM IN THE FORM OF A MONITORING DASHBOARD AND AUTOMATIC CONTROL SYSTEM FOR TEMPE FERMENTATION USING ESP32

Tempe fermentation is a traditional bioprocess that is very sensitive to fluctuations in temperature, humidity, and the accumulation of ammonia gas, which can reduce product quality in home industries. This study aims to design and implement an Internet of Things (IoT) ecosystem that includes hardware design to a monitoring dashboard and automatic control of tempe fermentation based on ESP32. The Rapid Application Development (RAD) method is applied with calibration stages for the DHT21 and MQ-135 sensors to ensure data accuracy. Implementation shows the system can maintain temperature within the range of 30°C – 35°C and humidity at 60% – 80% RH, and detect ammonia gas concentration of 0.13 – 0.32 ppm during the 24-hour fermentation process. Compared to conventional methods, the use of the system accelerates mycelium growth, resulting in denser and more compact tempe. The developed monitoring dashboard can display data in real-time and supports decision-making for users.
